When it came time for a list of cocktails, we went back to where it all started. Several years ago my buddy Carter, Amanda and I sat around a table at Peche and discussed going over to Ireland and Scotland to learn their whiskey making traditions and bring them back home.

Shortly before launching, we were fortunate enough to have the owners of Peche out to the distillery. Rob asked his bar staff to collaborate with us to come up with our very first cocktails, and we couldn’t be more impressed by their creations! Amanda loved the “Fizzy Fox,” while I’m a “Swift Kick” kind of guy.

Fizzy Fox:
1 ½ ounces Swift Single Malt
½ ounce grapefruit
½ ounce honey syrup
Champagne

A Swift Kick:
1 ½ ounces Swift Single Malt
½ ounce lime
½ ounce Chartreuse
½ ounce honey syrup

For good measure, their bar manager, Larry, gave us a variation on the classic Manhattan Club he’s been working on.

The Swift Manhattan:
Rinse of absinthe
2 ounces Swift Single Malt
½ ounce sweet vermouth
2 dashes orange bitters
1 dash Angostura bitters
Garnish with lemon peel twist

Co-owner and head chef, John, makes some incredible food, and actually has a place out by our distillery.
